Chipotle Tests Chorizo

Fast-casual chain is testing the new menu item in Kansas City.

NEW YORK – For a menu that hasn’t changed much in two decades, Chipotle Mexican Grill’s testing of a new protein is surprising news from the fast-casual chain.

CNBC reports that Chipotle is testing chorizo, a blend of chicken and pork seasoned with paprika, cumin and chipotle peppers, in its Kansas City restaurants. The chain tested chorizo four years ago in New York.

"Since we opened the first Chipotle restaurant 22 years ago, our menu has changed very little, and our focus has been on constantly improving the quality of every ingredient we use," Steve Ells, founder, chairman and co-CEO of Chipotle, said in a release. "While we have never been opposed to adding to our menu, we will only do so when we think there's an opportunity to add something that is really unique within our overall menu, and where we can find ingredients that meet our high standards."

CNBC notes that Chipotle will consider boosting chorizo's availability based on how Kansas City customers respond to the test.
